Food Journal (January 10th)

Thank God I'm reading through Genesis right now and was reminded that God has promised never to flood the earth again. Unfortunately, nothing was promised in regards to our yard, which is taking quite the beating with these daily torrential downpours. And on the subject of beatings, my sanity is taking one to. Being cooped up all day with two energetic little guys is not for the faint of heart.
 Anyway, now on to more important things- food.
My day started with coffee (2 PPV) and a bowl of bananas and peanut butter (5 PPV).
Liam decided that he wanted some peanut butter to, so I gave in to his pestering request.
I used to have a good mind, y'all. I know I did. But it must have gotten lost somewhere around the birth of child number two because I started doing things like giving a 1-year old a bowl of peanut butter and a spoon and letting him sit on the couch to eat it. Yeah, it all went south pretty fast. Peanut butter from head to toe. Literally.
So I had no choice but to talk up how fun it would be to take a morning bath. "The ducks are waiting for us!!" was my chant. Both boys complied.
After the boys were bathed, I got them all set up with a cartoon so that I could get started on making a ginormous Italian meat sauce for a gathering that we're hosting tomorrow night.
There was a lot of browning of the meat going on. Four pounds worth, to be exact.
And plenty of seasoning to go around.
Meanwhile, my destructive spirited child made his way into the kitchen to "help" Mommy wash dishes.
He then proceeded to pour a cup of water on his head.
There was no time to clean him up right then because there was a meat sauce at stake- a big meat sauce.
By the time I finally got to him he was soaked, face boogies and everything. He may or may not have needed another bath, but I did the mommy wipe down and changed his clothes instead.
So, needless to say, I worked up quite an appetite this morning. 
I opted for leftovers for lunch, but instead of putting my chicken and black bean taco filling into a shell, I used it as a dip. I topped it with low fat cheese, low fat sour cream, and pico de gallo.
I scooped it with baked tostito scoops, and boy, did it hit the spot! I'm such a sucker for chips and dip (8 PPV).
A little later in the afternoon I tried to get Liam interested in some sweet potato chips, but he wasn't having it. I ate a few, but not enough to count as points. By the looks of his budda belly, he may have just been full.
We cuddled up for stories before Liam's nap time.
I needed a little fuel to get me through to dinnertime so I whipped up a Blueberry Banana Smoothie with a little spinach thrown in. My weight watchers app said it was 2 PPV so I'm going with that.
It was yummy and very filling. And a beautiful shade of purple.
Thursdays are my weight watcher meetings. I got a complimentary celebration bar from the receptionist, and, of course, I couldn't resist so I ate it promptly. It was delicious! (2 PPV) And it was also fitting because I lost TWO POUNDS! Yay! Back on track!
I decided to celebrate a little more with a shrimp tempura roll that I picked up for Kevin and I to share. I had 3 pieces (5 PPV).
We had breakfast for dinner tonight. I scrambled myself two eggs with all sorts of veggies mixed in (spinach, onion, pepper, and leftover pico de gallo). It was delish!  I had some shaved chicken breast on the side (5 PPV)
Liam and I relaxed over a cup of pineapple upside down cake yogurt tonight (2 PPV).
And my drink of choice tonight while blogging is sugar cookie sleigh ride tea, which is simply delightful (0 PPV).
I get 29 PPV.
I used 31 today.
The shrimp tempura roll was so worth it!

Food Journal (January 9)

My morning started with a Kashi honey almond flax bar (4 points) and a cup o' joe (2 points). I wasn't really all that hungry this morning, but I knew I needed a little something to kick start my metabolism. 

We had a few errands to run mid-morning so I grabbed a banana (0 points) to hold me over until lunch.
 I had a tasty sandwich (5 points) for lunch. It included low fat cheese, shaved chicken breast, spinach, tomatoes, a sprinkle of salt, and some fat free poppyseed dressing. I love poppyseed dressing on a sandwich!
  And, of course, what's a sandwich without some Pop Chips, right? (3 points)
 The boys had more homemade pizza for lunch. I think they could live on homemade pizza.
   Liam got about half of his pizza on his shirt so I had to strip him down and toss his clothes in the washer.
 Meanwhile, he had a mini photo shoot of himself with my iphone.
 After lunch the boys and I played a game of hide-and-go-seek. I thought I would never find them *wink*
 Then it was my turn to hide. I hid on the bottom bunk and covered myself with a blanket. They had a blast trying to find me. Can you see them through the safety net?
 My next hiding spot was under Liam's crib, which may or may not have been a good idea. The boys thought it was funny, of course. We played for about an hour before Liam was ready for a nap.
 When Liam went down for his afternoon nap, Silas and I took the opportunity to try out my new Mastrad Chip Maker! I ordered it with an amazon gift card I got for Christmas. It makes crisp fruit and veggie chips without any fat or oil! Three minutes in the microwave and you've got some yummy snacks! We did Cinnamon Apple Chips (0 points) and Sweet Potato Chips (2 points). The apples were ok, but the sweet potatoes were delicious!
  My apple chips need a little work.
 I finished off my sweet potato chips outside while watching Silas play.
 The weather has been pretty nasty here so there was really only one option- strip down to your unders, put your rubber boots on, and go puddle jumping! And that he did!
After Liam woke up from his nap I cooked dinner and got the boys all bathed and fed, but I didn't get a chance to eat dinner before we headed out to AWANA. Consequently, I had two mini fruit roll-ups (2 points) with my little Cubbies at snack time. 
 It was camouflage night at Cubbies tonight, hence Mrs. Dolly's camo shirt and Silas' camo pants.
I was so excited about dinner when I got home tonight. Not only was I famished, but I LOVE chicken and black bean tacos (I adapted the recipe and did it stovetop, and I didn't make the slaw). I made myself three tacos topped with low fat cheese, low fat sour cream, and some pico de gallo.  I had three delicious tacos and called it a night! (12 points)
I get a total of 29 points.
I used 30 points today. 
Darn you, fruit roll-up!


 

Food Journal (January 8)

After a full day of errand-running yesterday, the boys and I stayed in today. The weather was yucky, and I had lots of laundry and cleaning to catch up on. 

My day started with a fried egg on toast, an extra piece of toast with a little whipped butter on it, and my regular cup o' joe. It totaled 7 points.

And, of course, breakfast wouldn't be complete without these crazy monkeys...

My mid-morning snack was a piece of cake topped with gumdrops and jelly beans for 0 points! I shared it with my furry friends. Hehe.

The boys and I played for about an hour before deciding that our tummy's needed some real fuel, not the pretend kind.
I was a bit nervous about lunch because I hadn't been able to go grocery shopping since we returned from our weekend trip. Fortunately I found a Morning Star Spicy Black Bean Burger hiding in the back of the freezer.
We didn't have buns, but we did have some low carb tortillas.

So I made a spicy black bean burger taco complete with low fat sour cream and cheese. I think I preferred it taco style instead of burger style! And it was only 6 points!
I had some pop chips with it. They're 3 points per bag.
Meanwhile, Liam fed the goldfish pepper for lunch. True story. Seriously, I can't take my eyes off of that boy! Thankfully, the fish survived.
My afternoon snack was an oskri bar served with a big 'ole pile of laundry. I think chocolate makes folding laundry more appealing, don't you? 4 points, thank you very much.
Arnold Palmer makes this delicious half tea/half lemonade drink mix that you should go out and buy right now. Zero points for the win!
 I made homemade pizza for the boys for dinner, but I didn't partake. Will power, people. The hubs and I had leftovers instead. I had more Laughing Cow Whipped Potatoes That Aren't and Ranch Roasted Potatoes. I dipped my potatoes (any maybe even some cauliflower) in Reduced Sugar ketchup this time, and savored every bite. It was a 6 point dinner.
After dinner I skedaddled out in the rain to buy groceries for the week. Kevin kept the boys so I didn't have to wrestle any monkeys while shopping. I grabbed a Coke Zero from Subway and took my good 'ole time browsing our friendly neighborhood Wal-Mart. It doesn't take much to excite me these days.
 I returned to find these two plumbers working out garbage disposal issues. They recruited me to dig stuff out (pictures not included). I'll never eat chicken tortilla soup again. 
 I rewarded myself with a sensational banana cream pie milkshake that I whipped up in the blender. It was 5 heavenly points worth. I'll post the recipe soon in case anyone is interested!
I also gave in to a craving for cheese tonight because, well, my will power was gone after the garbage disposal incident. It was a 2-point craving.

I get a total of 29 daily points. 
I used 33 points today. 
The good news is that I have a total of 49 weekly points. 
After tonight, I still have 45 weekly points to draw from this week should any more cheese cravings arise.
